Spinach Souffle

Ingredients
1 pkg frozen (10 oz) chopped spinach, drained
½ lb sharp cheddar, grated
4 tbsp flour
1 tsp salt
½ stick butter, melted
8 oz small curd cottage cheese
3 eggs
¼ lb brick cheese, grated
1 tsp pepper
Procedure

Drain & cool the spinach after cooking on stove. Beat eggs. Then add the butter, salt, pepper, and flour in a large bowl. Stir in the cooled spinach. Fold in the cheese. Put in a baking dish & bake at 325º for 1 hour.
